Learning objectives
The aim of the course is to provide basic knowledge on the biology, rearing and production systems of the main species reared in Italy. A particular attention will be paid to fish quality and commercialization of the product.
Expected learning outcomes
At the end of the course the student will acquire the technical and scientific knowledge to identify the species farmed, to manage the production of an aquaculture and to evaluate fish quality and characteristics of products.

Course syllabus
The aim of the course is to provide knowledge regarding rearing and production systems of fish. After the description of state of the art of the world aquaculture and the explanation of systematic and biology of the most important fish species, the main topics will be: characteristics of aquaculture systems, techniques and intensive farming of marine species (sea bass and sea bream), main activities in trout, eel and sturgeon farming, the production of mussel, quality and nutritional characteristics of fish and methodologies to determine quality and freshness of fish products.
