Learning objectives
Fornire le nozioni di base di nutrizione animale, affrontando gli aspetti relativi al metabolismo e all'utilizzazione dei principi nutritivi nel monogastrico e nel poligastrico. Fornire le conoscenze fondamentali relative ai principali alimenti di interesse zootecnico tradizionali e geneticamente modificati e le conoscenze delle caratteristiche qualitative degli alimenti in funzione della preparazione di mangimi e premiscele.

Foods for farm animals: classification and introductory concepts
The nutritive value of animal foods: sampling, food constituents and nutrients, food analysis, anti-nutritional factors.
Forages: nutritional characteristics of grasses, legumes, hays, silages.
Energy concentrates: nutritional characteristics
Protein concentrates: nutritional characteristics
Fibrous concentrates: nutritional characteristics
GM foods. Production and diffusion of GM crops: maize, soybeans
GM crops and livestock: food safety issues
EU rules on labeling of GM food and traceability. Role of EFSA - European Food Safety Authority

Practical activity:
Analysis of foods: sampling, proximate analysis of foods, other analytical procedures, NIRS, detection of GMOs in foods
Laboratory of food analysis: chemical analysis
