Learning objectives
The aim of the course is to consolidate and provide deeper knowledge related to insect materials as feed and food. Specifically the course aim to address recent advance in insect material feed/food with special focus on nutritional/dietic approaches and the use of biotechnology a tool for investigating efficiency, carry over of nutrients and traceability (linked to the regulatory framework)..
Expected learning outcomes
By the end of the course, students will be able to:
Understand potential and challenges of the insect value chain.
Describe the production processes, technical challenges, and applications of novel foods and feeds.
Apply methods for quality, safety, nutritional, and sustainability assessment, with special focus on traceability and identification.
To be prepared for operating in the field of food biotechnology and resilient food systems.
