Learning objectives
Obiettivo del corso è di fornire allo studente utili strumenti per riconoscere il rischio legato alla presenza di residui di sostanze illecite e contaminanti ambientali nei prodotti di origine animale. A tale scopo verranno trattate le modalità dei controlli effettuati in Italia e i regolamenti europei sui residui nei prodotti di origine animale. Al termine del corso, anche attraverso esercitazioni pratiche, lo studente dovrà essere in grado di effettuare valutazioni critiche riguardanti i residui negli alimenti.
