Learning objectives
The course (lectures and practical activities) aims to:
provide to the students fundamentals of microbiology, exploring the characteristics of bacteria, viruses and fungi and their interactions with both animals and human (zoonoses);
describe the microorganisms associated with milk and dairy products, ruminal environment and ensiling fodder.
Expected learning outcomes
The student at the end of the course have to know:
the characteristics of microorganisms (bacteria, viruses and fungi) and their pathogenicity factors that could cause some problems both in animals and human;
the role of bacteria in the ruminal environment and in the ensiling activities.
Moreover the student have to acquire the ability to detect the positive or negative microbial role in products of animal origin (dairy).

Introduction to microbes and short history of the microbiology
The prokaryotic cell: morphology and functional anatomy
Bacterial replication and metabolism: reproduction and growth on liquid and solid media
Bacterial genetics: genome and genetic recombination
Bacteria as pathogen agents: virulence factors
Classification of bacteria, algae and fungi
Methods for the observation of the microorganisms (microscopy, staining)
Microbiological diagnosis (sampling, bacterioscopic examination, cultural examination, biochemical tests, antibiogram, molecular techniques)
Introduction and history of immunology
The innate and adaptive immune systems
Different types of immune responses and the inflammatory response
Vaccination
Introduction to visuses
Structure of the viruses and hteir replication
Virus-host interaction
Calssification of the viruses
Virological diagnostic techniques
Prions and other non convenzional agents
Microbe control systems

Ensiled, ruminal and milk microbiology

Prerequisites for admission
Students have to learn the basics of biology, physiology, and biochemistry.
Teaching methods
Theoretical teaching is provided using slides; practical teaching includes the application of the main microbiological, virological and immunological techniques directly in the lab.

Assessment methods and Criteria
