Learning objectives
The course aims to provide students with the knowledge on the structure and function of vertebrate tissues and apparatuses and to deepen those aspects of animal morphology and physiology (mainly of mammals), which constitute an important biological basis for the cultural training of operators in the food field.
Expected learning outcomes
At the end of the course the students will be able to use the specific cognitive elements of animal morphology and physiology to establish comparisons and face problems concerning the production and transformation of food of animal origin using an appropriate technical and biological language.

Course syllabus and organization

Classroom lectures if allowed, otherwise through Teams.
The 2021/2022 lessons will be published in mp4 format on the ARIEL website of "Animal morphology and physiology", in the "Contents" section.
At the student's choice (if allowed by the regulations for the emergency phase) the exam can be
- written in the classroom + oral via Teams (for error correction)
- Speaking through Teams only, using the proposed writing assignments as a question pattern.
The lessons will be held in person (if allowed), registered with the Teams and published on the ARIEL website of "Animal Morphology and Physiology", in the "Contents" section.
Furthermore, the lessons recorded last year with Teams, as well as the lessons recorded in previous years with ADOBECONNECT are already present on the ARIEL site of "Animal Morphology and Physiology" in the "Contents" section.

Information on the organization of lessons and how to access Microsoft Teams and any other information on teaching will be available on the ARIEL website of the course: it is, therefore, advisable to consult it regularly.
Based on the evolution of the epidemic and in compliance with the relevant regulations, it will be possible to modify the modalities of the activities planned in the classroom, informing the students through ARIEL.
Course syllabus
ANIMAL TISSUE: Basics of Epithelial tissue. Connective tissue (adipose ct and energy storage; bone and Ca metabolism). Muscular tissue: white and red skeletal cell. Basics of Nervous tissue and system. LOCOMOTOR APPARATUS. CIRCULATORY APPARATUS. RESPIRATORY APPARATUS. DIGESTIVE APPARATUS: only morphology and physiology of liver and pancreas. EXCRETORY APPARATUS. MALE and FEMALE REPRODUCTIVE APPARATUS. MORPHOLOGY OF THE MAMMARY GLAND AND PHYSIOLOGY OF THE LACTATION. Basilar differences between APPARATUSES IN BIRD AND FISH and in terrestrial mammals. PRACTICALS: use of the optical microscope for histology and of the spectrophotometer for the determination of some blood compounds. Osteology and myology and meat cuts. CLASSIFICATION OF ANIMALS: Porifera, Cnidaria, Annelida, Arthropoda, Mollusca, Chordata-Vertebrata (Fish, Birds, Mammals). Biology of seafood.
Prerequisites for admission
Basic knowledge of organic chemistry, inorganic chemistry, and animal biology
Teaching methods
Lectures in the classroom and laboratory exercises (if allowed).
Otherwise, the program will be carried out by the Teams platform.

Assessment methods and Criteria
1) For written + oral exam:
written test with 5 open questions and 10 multiple choice questions to ascertain the level of acquisition of the discipline and the ability to express concepts with an adequate scientific language, followed by a final oral test to correct any errors.
2) For the full oral exam by Teams:
sharing of a written test, which will serve as an outline for the questions, with the same objectives as the test described above
